My favourite recipe of all time for pancakes comes from my Family Circle Kid’s Cookbook, which I’ve had since I was about 7. It clearly says “pancakes” but the product is definitely crepes. Which in my opinion are much much yummier than pancakes anyway.
I made these for our breakfast on Saturday morning, yum.

1 cup flour
1/4 teaspoon salt
1 egg
1 1/4 cups milk
Sift flour and salt into mixing bowl, add egg and milk
Whisk and whisk until smooth, set aside for 1 hour (I never set it aside, too impatient)
Gently heat a lightly greased 20cm frying pan (I also never measure my frying pans…)
Pour batter into a jug and easier pouring
Pour about 3 tablespoons into a pan, tilt pan to spread it all over evenly (I think I do less than that)
Lift edges with a knife (heard of a spatula?). When golden, flip it over and cook the other side
Place on kitchen paper, sprinkly lemon and sugar over
Roll up and serve hot with whipped cream or ice cream if you like
And there you go! Yum now I’m hungry.
