As part of my to do list I’m trying to cook new recipes to build my repertoire (ie, learn how to make lots of yummy food because I’m a piggy).
So when mum asked me to bring a summer pudding to our early Christmas BBQ last week like I had made for thanksgiving, I asked if I could make a bread pudding instead, as I’d never made one before and JA says it’s his absolute favourite dessert (one of the many anyway). Mum said that was cool so away I went!
If you haven’t guessed already, I like making easy things. This bread pudding recipe is super easy to do, and delish.
Ingredients:
Bread (I used an italian crusty bread)
30g melted butter
80g raisins (I didn’t put any in because I don’t like them and JA scolded me haha)
4 beaten eggs
475ml milk
150g white sugar (this was probably a little too much)
2g ground cinnamon
5ml vanilla extract
and I also added 2g nutmeg
Directions:
1. Preheat oven to 175 (350degrees F)
2. Break bread into small pieces in a baking pan (I used a casserole dish), drizzle melted butter over bread, sprinkle with raisins
3. In a medium mixing bowl, combine eggs, milk, sugar, cinnamon and vanilla (and nutmeg), beat well until mixed, pour over bread. Push bread down with a fork o make sure it’s covered and soaking up the egg mixture.
4. Bake for 45 minutes or until the top springs back when lightly tapped.
To be honest I didn’t like the mushy insides much, but JA argued that’s the best part! I like the crunchy top =)
